Gluten-Free & Vegan Banana Bread

A few extra ingredients are included in this recipe that make it extra special, such as vanilla extract, desiccated coconut, pecans, and cinnamon.


  • 5 bananas, mashed
  • ½ cup coconut oil, melted
  • ¼ cup coconut milk
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 cup brown rice flour
  • 1 cup buckwheat flour
  • ¼ cup desiccated coconut
  • 1 tsp bicarb soda
  • ½ tsp ground cinnamon
  • ½ tsp clove powder½ cup pecans
  • ½ cup chocolate chips
  • 1 ripe banana for garnish (optional)


Preheat oven to 180*C

1. Place banana, coconut oil, coconut milk, maple syrup and vanilla in a bowl and mix until combined.

2. Combine all dry ingredients

3. Add banana mixture to dry ingredients bowl and mix until combined

4. Add choc chips and pecans

5. Transfer the mix to a loaf tin lined with baking paper

6. Slice extra banana lengthways and gently place on top

7. Bake for 45-50 minutes or until a skewer inserted into the middle comes out clean

8. Allow to cool slightly in the tin, then turn out onto a wire rack and allow to cool completely before slicing
